Eric Bordelet Sydre Argelette Off-Dry Deluxe Sparkling Apple Cider is a premium cuvée made from a carefully selected blend of apples. This cider is named after the large and small rock formations that are iconic in the region, and is considered a true "Grand Cru". To enhance the flavor of the apples, they are crushed and allowed to ferment on their skins for 3 to 5 days. The apples used are a combination of 40% sweet, 40% bitter, and 20% sour, resulting in a finished cider with a residual sugar content of approximately 3%. This cider is considered off-dry, with a balanced acidity and a touch of tannins from the skin, making it best enjoyed after aging in the bottle for at least one year. The cider is fermented using indigenous yeast and is vinified in stainless steel vats, ensuring a top-quality final product.
