Shirayuki Edo Genroku Aged Sake bewitches the senses with a harmonious medley of bold, round flavors, reminiscent of dried red fruit, dark chocolate, honey, and a touch of oxidation. The unexpected marriage of salty and sweetish notes is further enriched by subtle undertones of yeast, dried corn, lime blossom, and a woody essence derived from its taru barrel aging. Boasting a potent blend of Yamada-Nishiki rice milled to 88% and an alcohol by volume of 17-18%, this sake is a contemporary homage to a 17th-century recipe, characterized by its viscous texture and heightened amino acid concentration.
Shirayuki Edo Genroku is a strong and complex and Junmai (Genshu), with an interesting salty sweetish haze. Dark chocolate, honey, yeast, dried corn as well as lime blossom and wood. It achieves its amber colour from the wooden barrels (taru) in which it is fermented. Sake aged anywhere from 1 to 8 years.
