An off-dry, thirst-quenching, "drinking" cider with light bubbles and lovely balance.
The Eric Bordelet Sidre Cuvee is a perfectly balanced, off-dry cider that is easy to drink and quenches your thirst with its light bubbles. The orchards are home to trees that are 50 years old and a few ancient trees that are up to 200 years old, and they boast a diverse range of 40-50 heirloom apple and pear varieties. The fruit is hand-harvested and grown using biodynamic farming methods. After being dehydrated for 4-5 weeks, the fruit is ground and pressed, then left to clarify before undergoing natural fermentation. The fermentation process is continuous, starting in tanks and finishing in the bottle, and the bubbles develop within two weeks of bottling. The cider is never artificially sweetened, but a small amount of residual sugar, ranging from 25-30 g/l, remains.
